Overnight Pumpkin Oatmeal

Make slow cooker pumpkin steel-cut oats by combining 1.5 cups of steel-cut oats, 6 cups of liquid (water and milk or almond milk), 1 cup of pumpkin puree, maple syrup, vanilla, and pumpkin pie spice in a greased slow cooker. Cook on low for 7-8 hours or high for 4 hours.

Ingredients

  • 1 ½ cups steel-cut oats
  • 4 to 6 cups water or a blend of water and milk/almond milk
  • 1 cup canned pumpkin puree (not pie filling)
  • ¼ cup pure maple syrup or brown sugar
  • 2 tsp pumpkin pie spice (or cinnamon, ginger, and nutmeg)
  • 1 TBL vanilla extract
  • ¼ to ½ teaspoon salt

Instructions

  1. Lightly coat the inside of a slow cooker with nonstick spray.
  2. Add all ingredients into the slow cooker and stir well to combine.
  3. Cover with the lid and cook on Low for 7 to 8 hours (great for overnight) or on High for 3.5 to 4 hours until creamy.
  4. Stir before scooping out and top with extra milk, toasted pecans, or a drizzle of maple syrup.
